Apple and Mushroom Salad

Light Fare for Lunch or a Great Starter Salad

Ingredientes

  • 2-1/2 cups mushrooms, sliced
  • 2 apples, peeled and diced
  • 1 tsp. salt
  • 6 romaine lettuce leaves
  • 8 oz. peeled and seeded cucumber
  • 1/2 cup green onions
  • 1 Tbsp. tarragon
  • 1 tsp. garlic
  • 2 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • 1-1/2 cups plain non-fat yogurt

Direcciones

  1. For the Dressing: place in a blender the diced cucumber, green onion, tarragon, garlic, lime juice, olive oil, and 1/2 tsp salt and blend until smooth.
  2. Pour into a lidded jar and add the yogurt.
  3. Shake or stir vigorously until smooth and well blended, makes 2 cups dressing.
  4. Use 1 cup for the salad and save 1 cup in the refridgerator for up to ten days.
  5. For the Salad: mix together the mushrooms, apples, 1/2 tsp salt with 1 cup of the dressing.
  6. Place 1 lettuce leaf on each of 6 plates.
  7. Divide the salad evenly on each of the lettuce leaves and serve.
