Balsamic And Roasted Garlic Dipping Oil

Ingredientes

  • 25 x Garlic cloves, (unpeeled)
  • 2 Tbsp. Plus 1 c. extra virgin olive oil, (preferably extra-virgin)
  • 1/2 c. Balsamic vinegar
  • 2 1/2 tsp Chopped fresh rosemary

Direcciones

  1. Preheat oven to 350F. Place unpeeled garlic cloves in baking dish.
  2. Add in 2 Tbsp. extra virgin olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake till garlic is golden and tender, about45 min. Cold.
  3. Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add in vinegar and rosemary and puree herb mix till smooth. With machine running, gradually add in remaining 1 c. extra virgin olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and chill. Let stand 15 min at room temperature and whisk before using.)
