Ingredientes

  • 1 1/4 c. Dry black beans, soaked
  • 4 c. Water
  • 1 x Bay leaf
  • 1/2 tsp Salt
  • 1 Tbsp. Red wine vinegar
  • 1 x Clove garlic, chopped
  • 1/4 tsp Cumin
  • 1 tsp Warm pepper sauce
  • 1 Tbsp. Minced cilantro
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 x Red pepper, diced
  • 1/2 x Yellow pepper, diced
  • 1/2 x Green pepper, diced
  • 1 x Red onion, diced
  • 4 x Scallion, thinly sliced

Direcciones

  1. Drain beans & rinse well. Put in a large pot with the water & bay leaf.
  2. Bring to a boil & simmer for 1 to 1 1/2 hrs. Drain.
  3. Combine salt, vinegar, garlic, cumin, warm pepper sauce, cilantro & extra virgin olive oil in a small bowl. Pour over hot beans. Toss well. Add in reemaining ingredients. Toss gently, garnish with fresh cilantro & serve at room temperature.
