.%20But%20I've%20been%20lacking%20ingredients,%20which%20has%20put%20a%20halt%20on%20the%20process.%20And%20I%20don't%20mean%20the%20usual%20omissions,%20like%20I%20usually%20write%20about%20in%20my%20posts%20when%20it's%20become%20clear%20I've%20forgotten%20something%20and%20need%20to%20make%20an%20off-the-cuff%20substitution.%20I%20mean%20I%20don't%20even%20have%20the%20basics%20to%20get%20a%20project%20started.%20Depressing,%20especially%20for%20me.%20The%20good%20news,%20though,%20is%20that%20I%20went%20shopping%20last%20night%20and%20reloaded%20my%20kitchen,%20and%20I%20have%20been%20reading%20Vegan%20Cookies%20like%20I%20suspect%20most%20people%20read%20The%20DaVinci%20Code%20or%20Harry%20Potter,%20so%20I'm%20sure%20some%20baked%20goods%20posts%20are%20forthcoming.%3C/p%3E%3Cp%3EInstead,%20I%20thought%20today%20I%20would%20talk%20about%20another%20dinner%20idea%20that%20has%20ended%20up%20being%20a%20big%20hit%20in%20my%20house:%20Bulgur%20Burgers.%20I'm%20sure%20many%20of%20readers%20just%20scrunched%20their%20noses%20when%20they%20read%20that,%20but%20bear%20with%20me!%3C/p%3E%3Cp%3EAlthough%20I'm%20generally%20a%20fan%20of%20such%20soy%20products%20like%20tofu,%20tempeh,%20and%20soy%20milk,%20I%20try%20to%20limit%20how%20much%20of%20it%20I%20eat.%20Soy%20is%20definitely%20a%20wonder%20food%20and%20very%20good%20for%20you,%20but%20from%20talking%20to%20different%20doctors%20and%20experts%20and%20doing%20research,%20it%20is%20pretty%20clear%20that%20the%20jury%20is%20still%20out%20regarding%20how%20much%20soy%20is%20recommended%20per%20week.%20I'm%20no%20doctor,%20but%20the%20general%20consensus%20is%20that%20it%20is%20fine%20to%20eat%20two%20significant%20servings%20of%20soy%20a%20week%20(like%20tofu%20or%20tempeh),%20but%20anything%20more%20than%20that%20and%20people%20seem%20to%20differ.%20As%20such,%20in%20any%20given%20week,%20Greg%20and%20I%20usually%20have%20one%20meal%20per%20week%20that%20is%20very%20soy-oriented,%20and%20occasionally%20we'll%20throw%20in%20a%20second%20one%20for%20good%20measure.%20In%20addition,%20although%20these%20options%20taste%20good,%20we%20try%20to%20limit%20the%20amount%20of%20processed%20%22mock%20meats%22%20that%20are%20on%20the%20market,%20because%20we%20figure%20it%20can't%20be%20healthy%20to%20eat%20out%20of%20the%20freezer%20constantly.%3C/p%3E%3Cp%3ESo%20what%20the%20heck%20else%20are%20we%20eating,%20especially%20to%20get%20protein?%20The%20good%20news%20is%20that%20there%20is%20a%20significant%20amount%20of%20protein%20in%20beans,%20grains,%20seeds,%20and%20some%20kinds%20of%20pasta,%20plus%20protein%20that%20gets%20overlooked%20in%20fruits%20and%20vegetables,%20so%20we%20have%20been%20experimenting%20with%20different%20kinds%20of%20recipes%20to%20vary%20our%20eating%20routine%20and%20still%20get%20plenty%20of%20protein.%3C/p%3E%3Cp%3EOne%20of%20the%20grains%20we've%20really%20enjoyed%20is%20bulgur,%20which%20is%20a%20great%20source%20both%20of%20fiber%20and%20protein.%20I%20think%20the%20majority%20of%20people%20eat%20bulgur%20(also%20called%20cracked%20wheat)%20in%20tabbouleh,%20which,%20although%20good,%20can%20get%20old%20kind%20of%20fast.%20And%20then%20one%20day,%20I%20was%20flipping%20through%20one%20of%20my%20trusty%20Moosewood%20cookbooks%20(Moosewood%20Restaurant%20Cooks%20at%20Home,%20to%20be%20exact)%20and%20found%20a%20recipe%20for%20bulgur%20burgers.%20Wow,%20have%20these%20turned%20out%20to%20be%20great!%20Greg%20and%20I%20love%20these%20because%20they%20are%20filling,%20and%20they%20are%20crunchy%20on%20the%20outside%20and%20tender%20on%20the%20inside.%20We've%20had%20them%20with%20a%20whole%20number%20of%20sides:%20everything%20from%20fries%20to%20roasted%20vegetables%20to%20a%20simple%20salad.%3C/p%3E%3Cp%3EThe%20original%20Moosewood%20recipe%20calls%20for%20a%20number%20of%20ingredients%20but,%20as%20this%20post%20-%20and%20many%20previous%20posts%20-%20have%20highlighted%20time%20and%20again,%20I%20am%20usually%20lacking%20some%20kind%20of%20ingredient.%20I%20find%20it%20is%20really%20easy%20to%20substitute%20ingredients%20or%20just%20leave%20out%20some%20ingredients%20altogether;%20just%20make%20sure%20at%20least%20one%20or%20two%20of%20the%20ingredients%20will%20serve%20as%20a%20binder%20to%20hold%20everything%20together.%20The%20other%20nice%20thing%20about%20this%20recipe%20is%20that%20it%20is%20really%20easy%20to%20make%20ahead%20in%20one%20of%20two%20ways;%20you%20can%20either%20cook%20the%20bulgur%20ahead%20of%20time%20and%20then%20mix%20in%20the%20extra%20ingredients%20before%20making%20burgers,%20or%20you%20can%20mix%20everything%20together%20and%20just%20make%20the%20burgers%20right%20before%20baking.%3C/p%3E%3Cp%3EI%20should%20note%20that%20when%20it%20comes%20to%20homemade%20burgers,%20I%20am%20terrible%20at%20actually%20getting%20the%20burger%20to%20stay%20together,%20regardless%20of%20what%20the%20recipe%20says.%20Although%20I've%20had%20the%20burgers%20fall%20apart%20on%20me%20in%20this%20recipe%20as%20well,%20I%20can%20say%20I've%20definitely%20had%20the%20most%20success%20with%20keeping%20these%20together.%20Or,%20on%20the%20flip%20side,%20sometimes%20I%20don't%20feel%20like%20making%20all%20of%20the%20burgers;%20in%20that%20case,%20you%20can%20honestly%20just%20skip%20making%20these%20into%20burgers%20and%20eat%20the%20hot%20bulgur%20mixed%20with%20the%20ingredients%20by%20itself,%20or%20mix%20everything%20together%20and%20reheat%20the%20next%20day%20(which%20I%20usually%20do).%20I%20love%20this%20recipe%20because%20it%20is%20so%20versatile,%20so%20don't%20be%20afraid%20to%20experiment!%3C/p%3E%3Cp%3EBulgur%20Burgers%20(adapted%20from%20Moosewood%20Restaurant%20Cooks%20at%20Home)%3C/p%3E%3Cp%3EYields:%208-10%20burgers%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1)%20Boil%20water;%20while%20water%20is%20boiling,%20saute%20garlic%20and%20bulgur%20in%20oil%20or%20well-sprayed%20pan%20over%20medium-high%20heat.%20Stir%20frequently.%20When%20the%20water%20boils,%20add%20it%20to%20the%20bulgur%20(it%20will%20sizzle,%20that%20is%20normal!).%20When%20the%20water%20boils%20again,%20cover%20and%20reduce%20heat%20to%20maintain%20a%20simmer.%20Simmer%20for%2015-20%20minutes%20until%20the%20bulgur%20is%20cooked%20(the%20water%20will%20be%20absorbed,%20and%20the%20bulgur%20will%20be%20soft%20but%20chewy).%3C/p%3E%3Cp%3E2)%20When%20the%20bulgur%20is%20cooked,%20remove%20from%20heat%20and%20mix%20in%20the%20ingredients.%20Form%20the%20mixture%20into%208-10%20burgers%20and%20place%20on%20a%20baking%20sheet%20covered%20with%20parchment%20paper.%20Bake%20in%20a%20preheated%20375%20degree%20oven%20for%2020%20minutes.%20They%20will%20be%20done%20when%20the%20outside%20is%20crunchy.%3C/p%3E){kind=link}
