Chicken Breast And Spinach Loaf

Ingredientes

  • 2 lb Boneless skinless chicken breasts minced
  • 2 lb Fresh spinach washed well, stemmed and minced (or possibly 10-ounces frzn minced spinach thawed and liquid removed)
  • 3/4 c. Finely minced carrots
  • 1 c. Finely minced onion
  • 5 x Large eggs lightly beaten
  • 1/2 c. Tomato paste
  • 1 tsp Salt
  • 3/4 tsp Black pepper, freshly grnd
  • 1 c. Seasoned fine dry bread crumbs

Direcciones

  1. Preheat the oven to 375 degrees.
  2. In a large mixing bowl, combine the chicken, spinach, carrots, and onion.
  3. In another bowl, beat together the Large eggs, tomato paste, salt, and pepper. Stir into the chicken mix to combine well. Mix in the bread crumbs. Don't overmix.
  4. Line 2 loaf pans with parchment paper and gently spoon in the chicken mix, being careful not to pack it down, making the mix too dense.
  5. Bake 40 to 50 min, or possibly till the internal temperature reaches 140 degrees on a meat thermometer.
  6. Let cold slightly and serve from the pan, or possibly wait 15 min before unmolding.
  7. This recipe serves 6 to 8.
  8. Comments: A great buffet dish as well as a magnificent main course. This loaf looks wonderful when placed in the center of a white plate and garnished with sprigs of herbs all around. It can also be served as a starter.
