Receta Chicken Wings alla Cacciatore
by lindsay clements

Ok, so New years is upon us, and we have made our own version of a classic game day/party food. Keep in mind that this was just a "wing it"recipe (pun intended) so mix it up and have fun.

Ingredients:

Marinara Sauce (see our recipe or use your own)

First and foremost, if not done, separate the wings and drumsticks with a knife. In a large container mix together the evaporated milk and egg. Marinate the chicken in then in the container, covered in the fridge for as long as you have. The longer the better. In a sauce pan, heat up your marinara sauce with the wine and capers and bring to a boil until thick. Reduce heat and let simmer. Bring your oil up to temperature in a large pot. (375 degrees). Also preheat the oven to 400 degrees. Mix all the dry ingredients together in a bowl. Take the chicken from the marinade, and place in the flour. Toss until all covered. Put into the oil and let fry, turning once or twice, until golden brown. Be sure to keep the temperature at the proper level the entire time. Strain the chicken on a paper towel. Put on a baking sheet and put into the oven for 5 minutes (just to be sure they are done)

Serve with the marinara on the side. This is a keeper for sure

Side note, for traditional spicy wings follow all the same steps for the dredging, exept replace the basil, and oregano with cayenne pepper, chili powder, crushed red pepper flakes, and paprika. Once you have fried them and strained them, you can toss them in a bowl with your favorite wing sauce, then put them in the oven like above. If you want make a simple wing sauce, do the following:

1/4 cup white wine vinager

2 tblp vegitable oil

1 tblsp paprika

1 tblsp cayenne pepper

1 tblsp chili powder

1 tsp salt

Stir together until disollved

Serve these bad boys with ranch or blue cheese... not the marinara, :)
