%3C/p%3E%3Cp%3EPicture%20it,%20Sicily,%201924...%3C/p%3E%3Cp%3Eok..not%20really..it's%20more%20like%20Kansas%20City,%202000...not%20quite%20as%20impressive..but%20wait...%3C/p%3E%3Cp%3Eso%20I'm%20out%20to%20dinner%20pre%20Prom%20and%20we%20go%20to%20this%20majorly%20italian%20restaurant..%22what's%20good?%22%20and%20I'm%20asking%20everyone-by%20dinner%20companions,%20the%20waiter,%20the%20table%20next%20to%20us.%20The%20most%20'italian'%20I'd%20been%20was%20Olive%20Garden.%20Other%20than%20that%20it%20was%20the%20occassional%20lasagna%20or%20spaghetti%20at%20home%20and%20school.%20But%20this%20was%20the%20real%20deal.%20This%20was%20Cascone's.%3C/p%3E%3Cp%3EI%20ended%20up%20getting%20the%20Chicken%20Spedini,%20and%20that's%20where%20the%20love%20affair%20began.%20Crispy%20breaded%20chicken,%20doused%20in%20this%20lemony,%20garlicky,%20sauce.%20Amazing.%3C/p%3E%3Cp%3EWhen%20reps%20would%20ask%20what%20to%20cater%20to%20the%20Dr's%20office%20(a%20few%20years%20later)%20I'd%20answer%20with%20a%20sound%20%22Get%20the%20Spedini%20from%20Cascone's%22.%20Sometimes%20they%20would%20bend%20to%20my%20will.%20And%20when%20they%20did%20it%20was%20a%20happy%20happy%20day.%3C/p%3E%3Cp%3EI%20recently%20had%20the%20great%20pleasure%20of%20becoming%20friends%20with%20a%20bona%20fide%20Cascone,%20she's%20absolutely%20delightful,%20but%20totally%20zip-lipped%20about%20family%20recipes.%20So%20I%20had%20to%20come%20up%20with%20it%20on%20my%20own.%3C/p%3E%3Cp%3EI%20was%20pretty%20intimidated%20by%20the%20rolling%20the%20chicken%20thing,%20so%20instead%20I%20did%20a%20milanese%20prep%20on%20it..but%20it's%20the%20sauce%20that%20makes%20it...try%20it%20for%20yourself!%3C/p%3E%3Cp%3EThe%20Chicken-the%20new%20edition%20of%20Martha%20Stewart%20magazine%20has%20a%20milanese%20article%20that%20is%20no-fail....so%20I%20went%20off%20of%20that.%20I%20butterflied%20two%20chicken%20breasts,%20and%20lightly%20pounded%20them%20out.%20Then%20dipped%20them%20in%202%20eggs%20that%20were%20beaten,%20dreadged%20them%20in%20plain%20ol%20flour,%20coated%20them%20in%20italian%20bread%20crumbs%20(mine%20were%20homemade%20that%20I%20had%20in%20the%20freezer),%20then%20fried%20the%20chicken%20in%20about%20a%201/2%20inch%20of%20vegetable%20oil%20(I%20would%20have%20used%20extra%20virgin%20olive,%20but%20I%20used%20it%20for%20the%20Amogio..you'll%20see)%20until%20golden%20brown.%20When%20I%20took%20them%20out%20I%20put%20them%20on%20a%20towel%20lined%20sheet%20(to%20soak%20out%20the%20excess%20oil)%20lightly%20salted%20them,%20and%20grated%20some%20fresh%20parm/reg%20over%20top-then%20put%20them%20on%20a%20baking%20sheet%20and%20into%20the%20oven%20at%20200.%20This%20is%20more%20for%20warm%20keeping,%20not%20extra%20cooking.%3C/p%3E%3Cp%3EAmogio%20(adapted%20from%20foodnetwork.uk)%3C/p%3E%3Cp%3Eadd%20to%20a%20sauce%20pan,%20and%20bring%20to%20boil,%203%20minutes.%20Remove%20from%20heat.%3C/p%3E%3Cp%3EI%20served%20ours%20over%20some%20Lemon%20Pepper%20pasta.%20I%20put%20a%20couple%20spoonfuls%20of%20the%20amogio%20over%20the%20pasta,%20then%20the%20chicken,%20then%20some%20amogio%20on%20the%20chicken.%20This%20is%20a%20very%20flavorful%20sauce,%20so%20you%20only%20need%20about%202-3%20Tablespoons%20full,%20versus%20the%201/4-1/2%20cup%20(or%20more)%20of%20spaghetti%20sauce%20you%20might%20use.%20Don't%20make%20it%20swim,%20just%20splash%20it%20a%20little.%3C/p%3E%3Cp%3ETotally%20amazing,%20and%20tastes%20so%20much%20like%20an%20actual%20pedigreed%20Italian%20person%20made%20it!%20:)%20We%20LOVED%20it!%20I%20hope%20you%20do%20too!!%3C/p%3E){kind=link}
