Chilli calamari Greek-style

Greek dishes are not big on Chilli, but the addition of this gives a great Zing to the dish, Enjoy
To serve four generous portions you need:

Ingredientes

  • 2 fresh red or green chillies, seeded and finely chopped
  • ½ cup fresh coriander leaf
  • 4 cloves of garlic, peeled and finely chopped
  • 2 tins of chopped tomatoes
  • 1 can of tomato cocktail or tomato juice
  • 1 onion, peeled and coarsely chopped
  • 2 cups of medium peeled, cooked prawns
  • 2 teaspoons brown sugar
  • 260ml white wine
  • 500g calamari rings
  • 500 calamari tentacles or bodies ringed
  • Coarse salt and black pepper
  • 2 tablespoons olive oil for cooking (and more for serving)

Direcciones

  1. In a large saucepan heat the oil and fry the chilli, garlic and onion together over medium heat until just starting to soften.
  2. Add the wine, tinned tomatoes and tomato juice, the sugar and a sprinkling of salt and pepper.
  3. Cover and cook gently over low heat for about 50 minutes.
  4. Add the calamari and cook for a further 45 minutes.
  5. Add the prawns and simmer through to heat for about 10 minutes.
  6. Add the coriander leaf and a dash of olive oil just before serving.
  7. Crusty bread is good for mopping up the lovely sauce.
