Ingredientes

  • 1 x Fresh ham - (6 to 8 lbs)
  • 20 x Pitted prunes coarsely minced
  • 1 c. Chopped onion
  • 1 1/2 c. Pared, minced apple
  • 1/4 c. Applesauce
  • 10 1/2 ounce Beef consomme - (1 can)
  • 1 c. Currant jelly
  • 1/2 c. Orange juice
  • 1/3 c. Port wine
  • 1/2 tsp Salt

  1. Have butcher remove center bone from a fresh ham and cut a deep pocket in the cavity. Combine prunes, onion, apple, and applesauce. Stuff ham with apple mix, overlap and secure ends. Score the fat side of the ham and place fat side up in a shallow baking dish. Pour consomme over ham. Roast at 325 degrees for 30 to 35 min per lb., basting often. Transfer ham to a serving platter and keep hot. Remove and throw away fat from pan juices. Bring pan juices to a boil and cook for 5 min. Add in remaining ingredients and simmer for 10 min.
