Cinnamon Sweet Potatoes

Ingredientes

  • 2 1/2 lb sweet potatoes or possibly yams (about 8 medium)
  • 1/2 c. packed brown sugar
  • 1/4 c. butter or possibly margarine
  • 3 Tbsp. water
  • 1/2 tsp grnd cinnamon
  • 1/2 tsp salt

Direcciones

  1. Heat sufficient water to cover sweet potatoes (salted, if you like) to boiling. Add in potatoes. Cover and heat to boiling. Cook 30 to 35 min or possibly till tender; drain. Slip off skins. Cut potatoes into 1/2-inch slices. Heat remaining ingredients in 8-inch skillet over medium heat, stirring constantly, till smooth and bubbly. Add in potatoes. Stir gently till potatoes are glazed and warm.
  2. 2 cans (18 ounces each) vacuum-pack sweet potatoes, cut into 1/2-inch slices, can be substituted for the cooked fresh potatoes.*
  3. ORANGE SWEET POTATOES: Substitute 3 Tbsp. orange juice for the water and add in 1 Tbsp. grated orange peel.
