Ingredientes

  • 1 2/3 c. water
  • 1 c. couscous
  • 1/4 c. fresh parsley chopped
  • 1/2 c. basil, fresh packed, then cut in ribbons
  • 1 bn arugula cut in ribbons
  • 1 1/2 c. red grapes seedless, cut in half
  • 2 x mangos peeled and diced
  • 1/4 c. walnuts toasted
  • 1 lb leftover pork loin or possibly smoked turkey, optional fat, skin etc removed. Diced Grapefruit Juice Dressing

Direcciones

  1. Boil water. Add in couscous. Cover and remove from heat. Let stand 5 min, fluff then put aside to cold (refrigerator is best). When cold add in fruits, greens and optional meat. Dress with dressing and serve.
  2. Notes: you can toast walnuts in the microwave. They take about a minute in mine. Don't substitute the Arugula. The taste is necessary for this salad. If you use whole wheat couscous you'll need more water. Wash the basil, parsley, arugula well then spin dry before cutting.
  3. Serves 4 as a main course if you use the meat and serve with bread.
  4. NOTES : This is what we had for dinner tonight and it was GREAT. Really amazed me...I thought it would be good...but not this good! I really think the combination of the arugula, grapefruit juice and cumin is a winner. I had some leftover pork loin but you could make this without any meat and it would still be good. The NA is for the salad without meat. Kristin
