Ingredientes

  • 1 bot clam juice
  • 1 med onion, minced
  • 2 x garlic cloves, smashed
  • 2 lrg mushrooms, sliced
  • 1 1/4 c. dry sherry
  • 1 3/4 c. water
  • 6 x peppercorns
  • 2 x bay leaves
  • 2 sprg thyme (1/2 tsp. dry)
  • 1/3 c. butter
  • 1/3 c. flour
  • 2 c. enriched fish stock (above)
  • 1 c. lowfat milk
  • 1 pkt lump crab meat, thawed and flaked (8 ounce. pkg.)
  • 2 1/2 c. lowfat milk
  • 3/4 c. heavy cream
  • 5 dsh Tabasco
  • 1 1/2 tsp salt
  • 8 ounce Brie cheese, divided: 6 ounces/2 ounces Chives, small amount, minced, for garnish Combine and bring to a boil. Reduce heat and simmer 30 min. Strain and reserve. Makes approximately 2 c..

Direcciones

  1. Soup:Heat butter in a 5 qt pot. Stir in flour and cook 2 min. Add in enriched fish stock and 1 c. lowfat milk. Stir in and simmer 2 more min. Add in crabmeat and heat gently 5 min.
  2. Heat the remaining lowfat milk and cream with Tabasco and salt added in a large microwave-safe container till bubbles start to create around the edges. Don't boil. Add in crab mix.
  3. Cut 6 ounces Brie cheese into small pcs, rind removed, and add in to warm soup in microwave container. Stir to heat. Cut remaining 2 ounces of Brie into small pcs and reserve to add in directly to soup bowls when serving.
  4. Let soup stand 15 min to blend, then reheat in microwave on defrost setting for 5 min.
  5. To serve:Place a small piece of Brie in soup bowl. Ladle soup over and sprinkle with a few chopped chives.
  6. Time ManagementEnriched fish stock may be prepared a day or possibly two in advance and refrigerated till ready to complete soup. The rest of the soup should be made no more than 1-2 hrs before serving. Reheat in microwave, being very careful not to boil.
