All I have to say is Yum! This is one of my favorite ways to make beef roasts and/or tips. It's simple, smells fantastic and delicious. If you feel adventurous, try replacing the beef broth with 28 ounces of plain canned diced tomatoes or canned diced tomatoes with green chilies (mild/medium depending on taste). Make sure to use the juices in the can.

        Hi Myra:
Though we don't eat beef much anymore I like the sound of this. Very simple to prepare and sounds like it has lots of beef flavor. Eye of round roast is a nice lean cut that slow cooks well. I have added to My Try Soon folder. Thanks for sharing!
        Bob
