Do Ahead Stuffed Baked Potatoes

Ingredientes

  • 4 med. baking potatoes (about 2 lbs.)
  • 1/3 c. butter
  • 1/2 c. grated sharp cheddar cheese
  • 1/2 c. light cream
  • 2 T chives
  • 3/4 teaspoon salt
  • Pepper to taste
  • Paprika

Direcciones

  1. Preheat oven to 425 degrees. Scrub potatoes and pierce skin with fork. Bake about 1 hour. Cut potatoes in half lengthwise and scoop out inside. Leave skin intact for shell.With electric mixer, beat potatoes, butter, cheese, cream, chives, salt and pepper till smooth and light. Spoon mix into shells, fluffing up center. Sprinkle with paprika. Let cool completely. Wrap in plastic wrap and freeze.
  2. To serve, remove from freezer. Throw away wrap. Bake uncovered at 450 degrees for 30 min. Makes 8 servings. Great for holidays to save time.
