%3C/p%3E%3Cp%3ENot%20a%20problem%20as%20I%20happen%20to%20love%20making%20cavatelli-%20so%20many%20wonderful%20memories%20come%20to%20me%20as%20I'm%20passing%20the%20dough%20through%20the%20well%20used%20wooden%20rollers%20of%20my%20machine.%20My%20Nonna%20used%20to%20use%20a%20very%20old%20wooden%20contraption,%20but%20after%20she%20passed%20no%20one%20could%20find%20it,%20so%20I%20purchased%20one%20in%20New%20York%20City%20that%20has%20served%20me%20well%20through%20the%20years.%20For%20the%20purposes%20of%20this%20post%20I%20just%20looked%20online%20and%20the%20machines%20are%20easily%20found%20for%20a%20reasonable%20price.%20One%20example%20is%20here%3C/p%3E%3Cp%3E(For%20the%20record-%20I%20have%20no%20association%20with%20this%20company-%20I%20just%20Googled%20cavatelli%20machine%20and%20several%20popped%20up)%3C/p%3E%3Cp%3ECavatelli%20can%20be%20made%20with%20potatoes,%20ricotta,%20or%20just%20a%20pasta%20type%20dough.%20My%20Nonna%20loved%20them%20with%20ricotta,%20so%20that's%20what%20I%20made%20for%20my%20mom%20today.%3C/p%3E%3Cp%3EFrom%20the%20weekend's%20trip%20to%20the%20Farmer's%20Market,%20I%20had%20zucchini,%20baby%20leeks,%20peppers,%20and%20some%20wonderful%20garlic%20chicken%20sausage.%20I%20julienned%20the%20vegetables%20and%20made%20a%20basic%20saute%20with%20olive%20oil%20while%20roasting%20the%20sausage%20in%20the%20oven.%20I%20divided%20the%20veggies%20and%20cut%20up%20the%20sausage.%3C/p%3E%3Cp%3EThe%20sausage%20and%20half%20the%20veggies%20became%20a%20pasta%20sauce%20(I%20added%20about%20half%20a%20cup%20of%20the%20pasta%20water%20to%20make%20it%20a%20bit%20creamier).%20If%20I'd%20have%20had%20any,%20some%20Kalamata%20or%20other%20oil%20cured%20olives%20would%20have%20been%20a%20lovely%20addition.%3C/p%3E%3Cp%3EThe%20other%20half%20of%20the%20vegetables%20%20were%20combined%20with%20some%20of%20the%20cavatelli%20and%208%20eggs%20in%20my%20trusty%20cast%20iron%20skillet.%20When%20it%20was%20partially%20set,%20I%20dropped%20some%20very%20creamy%20Buratta%20on%20top%20(to%20read%20more%20about%20Buratta,%20go%20here%20)%20on%20top%20and%20finished%20the%20frittata%20off%20in%20the%20oven.%20Voila!%20Tomorrow's%20lunch!%3C/p%3E%3Cp%3Ea%20scant%20half%20cup%20(maybe%20a%20third)%20of%20heavy%20cream%20(some%20use%20milk%20and%20that's%20fine.%20My%20Nonna%20always%20used%20the%20cream%20from%20the%20top%20of%20her%20fresh%20milk,%20so%20I%20use%20cream)%3C/p%3E%3Cp%3EThe%20dough%20can%20be%20mixed%20by%20hand%20as%20you%20would%20a%20pasta%20dough.%20Make%20a%20well%20in%20the%20flour%20and%20work%20in%20the%20liquid%20ingredients.%20I%20had%20some%20health%20issues%20a%20while%20back%20and%20simplified%20the%20way%20I%20do%20some%20things%20to%20avoid%20standing%20for%20long%20periods-%20so%20I%20now%20mix%20the%20dough%20in%20my%20food%20processor.%20I%20put%20the%20ricotta,%20eggs,%20salt%20,%20and%20cream%20in%20the%20processor%20and%20pulse%20to%20combine.%20Add%20the%20flour%20and%20pulse%20till%20it%20forms%20a%20ball.%20Turn%20onto%20a%20lightly%20floured%20board,%20knead%20lightly%20to%20form%20a%20smooth%20ball,%20and%20cover%20with%20plastic%20wrap%20and%20an%20overturned%20bowl.%20Allow%20to%20sit%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EDivide%20dough%20in%20half%20and%20place%20one%20half%20on%20a%20lightly%20floured%20board-%20keep%20the%20other%20half%20covered.%20Roll%20the%20dough%20out%20into%20a%20rectangle%20a%20little%20less%20than%201/2%20an%20inch%20thick.%20Cut%20into%20strips%20about%201/2%20to%203/4%20of%20an%20inch%20wide.%20Put%20a%20plate%20under%20the%20cavatelli%20machine.%20Flour%20strips%20well,%20and%20pass%20each%20through%20the%20wooden%20rollers,%20turning%20the%20crank%20clockwise%20with%20the%20other%20hand.%20The%20cavatelli%20will%20drop%20onto%20the%20plate%20as%20they%20are%20cut.%20Place%20them%20%20on%20a%20lightly%20floured%20baking%20sheet%20(%20I%20separate%20the%20layers%20with%20waxed%20paper),%20cover%20with%20plastic%20wrap,%20%20and%20refrigerate%20until%20ready%20to%20cook.%20Cook%20cavatelli%20in%20large%20pot%20of%20boiling%20well%20salted%20water.%20Cavatelli%20will%20rise%20to%20the%20surface%20when%20cooked-%20about%203-5%20minutes.%20Drain%20and%20top%20with%20your%20sauce%20of%20choice.%20Or%20make%20a%20frittata!%20:)%3C/p%3E%3Cp%3ETutti%20a%20Tavola!!%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
