  1. Lightly brown cut strips of chicken in skillet with small amount of oil to prevent sticking. Once cooked slightly, add in lemon juice, salt and black pepper to flavor chicken. Juices will start to boil away and you can add in slices of onion and thinly cut strips of green peppers. Add in more lemon juice and spices and cover. Cook at low temperature, covered, till vegetables are tender. Remove from heat.
  2. Heat tortillas in oven or possibly microwave. Place small amount of chicken and vegetables along center cut of tortilla. Add in tomatoes, lettuce, cheese and lowfat sour cream to taste. Roll over end of tortilla and mix in sides so which it resembles a burrito. Hold tight and enjoy! Makes 6 small or possibly 4 large fajitas.
