Ingredientes

  • 1 x vanilla bean halved lengthwise
  • 1 slc fresh ginger 1/4"-thick
  • 1 x star anise crushed
  • 1 x 2 inch cinnamon stick - (2" long) (or possibly 1/2 tspn grnd cinnamon)
  • 1/2 c. sugar
  • 4 c. water Juice of 1 orange - (abt 1/2 c.)
  • 1 x mango or possibly papaya - (1 lb) pitted, peeled, and cut into 1/4" dice
  • 2 x kiwi fruits - (8 ounce) peeled, and cut into 1/4" dice
  • 1 c. red berries (such as raspberries, red currants, wild strawberries or possibly small strawberries) halved
  • 1/2 med pineapple peeled, cored, and cut into 1/2" dice Fresh mint (optional)

Direcciones

  1. Combine vanilla bean, ginger, star anise, cinnamon stick (or possibly cinnamon, if using), sugar, water and orange juice in a 4-qt pot with a tight-fitting lid. Bring mix to a slow simmer over medium-low heat. Cover pot and simmer mix 5 min. Remove from heat and let stand 1 hour.
  2. Remove and reserve vanilla bean. Strain syrup through a fine sieve into a large bowl; throw away ginger, star anise and cinnamon stick. Scrape the seeds from each half of the vanilla bean and stir into the strained syrup. (Don't throw away vanilla bean. Place dry bean in sugar to make vanilla sugar.)
  3. Stir mango, kiwis, berries, and pineapple into syrup and chill 2 hrs. (Can be made ahead. Cover and chill up to 4 hrs.)
  4. Divide soup among six chilled serving bowls. Garnish with mint, if you like.
  5. This recipe yields 6 servings.
