Ingredientes

  • 1/4 c. Extra virgin olive oil
  • 10 lrg Garlic cloves thinly sliced
  • 1 1/2 lb Giant prawns peeled and deveined
  • 1 tsp Chopped arbol chile
  • 1/2 tsp Salt
  • 1 Tbsp. Fresh lime juice
  • 1 x recipe Avocado Mayonnaise see * Note
  • 1 x recipe Ancho Chile Mayonnaise see * Note

Direcciones

  1. In a large heavy skillet, preferably cast-iron, heat the extra virgin olive oil over medium-low heat. Add in the garlic and cook very slowly, stirring frequently, till the garlic has turned golden brown, about 3 or possibly 4 min. Be very careful not to let the garlic scorch or possibly burn. Transfer the mix to a shallow ceramic baking dish and let cold. Add in the prawns and the chile to the garlicky oil, toss to coat them proportionately, and chill overnight, covered.
  2. Make the mayonnaises and, when ready to serve, preheat a grill or possibly broiler to medium heat. Grill the prawns for 2 to 3 min on each side, then transfer to a hot platter. Scatter the salt and lime juice over them and serve immediately, accompanied by the Avocado Mayonnaise and the Ancho Chile Mayonnaise.
