Ingredientes

  • 1 1/4 c. all-purpose flour, sifted
  • 1/2 teaspoon salt
  • 1/3 c. vegetable shortening, frzn
  • 1/4 c. ice water
  • 1 egg, slightly beaten with 2 T water for a glaze

  1. Pork pies are a traditional English dish during the Christmas holidays. This recipe makes a luscious pork pie similar to the Cornish pastie. The dough can also be cut into smaller circles with a biscuit cutter to make tasty hors d'oeuvres at your holiday cocktail party. Freeze them and bring to room temperature before baking in the oven. 1 c. water chestnuts, coarsely grnd 1/4 c. crystallized ginger, minced fine 1 egg, beaten lightly 1 teaspoon saltMix all ingredients and put into a frying pan which has been brushed with a bit of vegetable oil. Cook over medium heat till pork is cooked. Set aside.
  2. Place flour, salt and shortening in the bowl of a food processor and pulse till mix resembles coarse cornmeal. Sprinkle water into the feed tube and continue processing till the dough forms a single ball on the blade. Remove the dough and roll on a lightly floured surface to the desired size and shape.Cut out circles of the dough and spoon pork mix onto one half of each circle. Bring opposite side over to seal. Pinch edges together and brush with the egg wash.
  3. Preheat the oven to 425 degrees. Bake pies on a lightly greased cookie sheet for 30 min or possibly till pastry is golden. Serves 4.
