Grandmother Kreiser's Icebox Cookies

Ingredientes

  • 2 c. Margarine (not butter)
  • 1 c. Firmly packed light brown sugar
  • 1 c. Granulated sugar
  • 2 x Large eggs
  • 2 tsp Fresh lemon juice
  • 2 tsp Vanilla extract
  • 4 1/2 c. All-purpose flour
  • 1/4 tsp Baking pwdr
  • 1/4 tsp Baking soda
  • 1/4 tsp Cardamom
  • 1/4 c. Minced walnuts Or possibly pecans or possibly almonds
  • 1/2 tsp Salt
  • 1 tsp Cinnamon

  1. Beat together the margarine and sugars till fluffy. Add in the Large eggs and beat till well combined. Beat in the lemon juice and vanilla. Mix together the flour, baking pwdr, baking soda, cardamom, nuts, salt, and cinnamon, then stir the dry ingredients into the margarine mix to make a stiff dough. Shape the dough into a long cylinder and chill overnight. THE DOUGH CAN BE Frzn AT THIS POINT.
  2. Preheat the oven to 375 degrees. Slice the cookie dough paper thin, 1/8 inch is best, and arrange on a baking sheet. Bake the cookies till light brown, about 13 to 15 min. YIELD 36 COOKIES
