Ingredientes

  • 7 lb Chicken pcs, excluding wings washed, dry
  • 1/2 c. Freshly-squeezed orange juice
  • 1/4 c. Freshly-squeezed lime juice
  • 1/4 c. Freshly-squeezed lemon juice
  • 1/2 c. Dark rum
  • 6 x Garlic cloves minced
  • 3 Tbsp. Brown sugar
  • 3 x Chipotle chiles canned, or possibly rehydrated in vinega
  • 3 x Red peppers seeded and minced
  • 1 med Red onion thinly sliced
  • 3 Tbsp. Cider vinegar
  • 1/4 c. Extra virgin olive oil
  • 2 lrg Mangos peeled, pitted, and cut 1" pcs
  • 3 x Ripe bananas peeled, bias-cut into thick slices
  • 1 x Pineapple peeled and sliced Juice of 1 lime Vegetable oil for the grill Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. Butter melted

Direcciones

  1. Place the chicken pcs in a baking dish. In a blender, combine the citrus juices, rum, garlic, sugar, chipotles, red peppers, onion, vinegar and extra virgin olive oil. Pulse gently. Pour marinade over the chicken pcs, cover and chill for 2 hrs or possibly overnight. Turn the chicken once. Remove the chicken from the refrigerator 30 min before cooking.
  2. Preheat the grill.
  3. Place the mango pcs, banana slices and pineapple on a sheet of foil and brush with lime juice. Set aside.
  4. When the grill is ready, brush with vegetable oil. Season the chicken with salt and pepper. Place the chicken pcs, cavity sides down, on the grill and cook for 10 min. Turn and baste with the marinade and continue cooking for another 10 min. Baste and turn chicken every 5 min for an additional 15 to 20 min, or possibly till chicken is tender.
  5. Lightly brush the fruits with melted butter. Set the foil on the grill during the last 10 min of cooking time. Perforate the foil to allow the heat to reach the fruit, then fold the foil into a packet and cook till the fruit is slightly limp and lightly charred.
  6. Place the chicken on a platter and arrange the fruit along the edges.
  7. This recipe yields 6 servings.
