Pork is inexpensive here, and good.

But sometimes the pork chops, particularly the bone-in chops, look like they were cut by an inept two-year using a dull safety scissors. The thickness in a single chop can range from paper-thin to a more than an inch.

I’ve solved the problem.

I buy a pork loin roast and cut my own boneless chops. I get the thickness I like and they are very tender and moist.

And a bonus: I don’t have to worry about biting into a loose bone chip.

Remember, pink in the middle is perfect for pork.

Grilled Thick-cut Pork Chops with Spicy Orange Glaze

Total time: 30 minutes

Instructions:

In small bowl whisk together the ingredients for the marinade – you need to use the whisk to break up the marmalade.

Pour over chops and let marinate for 15 minutes (or longer).

Remove chops from marinade and cook on barbecue 15 – 20 minutes turning once.

Put marinade in a small saucepan and heat to boiling.

Spoon over chops and serve.

We had a busy weekend in our little neighborhood.

On Wednesday the farmer across the way marked out a big circle in his newly harvested field with straw bales.

We started to worry.

Racing ATVs and dirt bikes is very popular in this area. The thought of listening to the constant whining of kids riding in circles was unsettling.

It turned out there was more going on.

On Friday night the campers started moving in.

You can see part of the circle to the left of the campers.

Things got busier on Saturday.

There was a ‘vide grenier’ – literally translated as ‘empty attic’, it’s a garage sale, boot sale, whatever you want to call it.

Most of the tents are behind the trees, but you can see more of the track… as well as the dirt bikes raising the dust, going around in circles…. Whining.

There was the usual inflatable castle for the kids to play in, the food and wine concessions, as well as the stalls selling whatever.

There was music over the load speaker during the day and live music with a DJ at night.

Even with all the excitement, mon mari managed to finish cutting the rest of the firewood and getting it stacked in the barn.

After he finished stacking the firewood he made a new, wood, wood basket.

The old one was wicker, and after 2 years of use it was in tatters.

Mon mari decided to take it apart and build a new basket out of wood..He used the base with the wheels and the handle from the old basket. It should hold enough wood to get us through a day of fires in the kitchen stove.

He is rather handy to have around…..
