Receta How I make a hot sauce

Because I do this differently every time I make it, the ingredients and amounts are pretty much whatever you want them to be. This is not salsa, but hot sauce. I use this on everything.

Ingredientes

  • Various peppers either from your garden, farmer's market or grocery store. I like to use several kinds as the flavors of different peppers attach themselves to your taste buds at different times while eating....like first bite, overall taste, back of the throat and after taste. Spiciness is a personal preference. You can see from the pictures that I lean toward some pretty spicy ones. I also have a couple of Habaneros, Cfresno and jalapenos...then wahtever else is fresh.

  1. Wash and clean your peppers, then roast them. I prefer to cook them on my grill, but I have had similar luck with broiling them in the oven and right on a stove top. Once your peppers have softened and start to shrink, remove them from the grill and place them in a plastic bag to steam. Leave them for 10 - 15 minutes. I've never had a plastic bag melt during this process, but if you're worried about it a tight paper bag should work as well.
  2. If you have gloves, I recommend that you put them on now. If you don't wash your hand VERY THOROUGHLY when finished and still keep your and out of your (and others) eyes and genital areas.
  3. Remove the plastic like outside of the peppes and dispose ot it. Don't worry about getting it all, but do try to get as much as possible.
  4. Remove the stems, cut the pepper in half and scrape out the seeds and ribs of the peppers. I usually will wash them once I have completed this step to remove any leftover seeds and skin.
  5. At this time, I usually also chop up onions and garlic, then saute everything for another 10 minutes of so. ***You can skip this step and just use powered onion and garlic powder***. I suspect that the onions and garlic do cause the sauce to be a little more orange-ish, but I love the extra tastiness they add,.
  6. Now add everything to a food processor or blender. I also usually add at this point a cup of vinegar and 4 oz of tomato paste. Blend it as smoothly as you'd like. If the sauce is too thick, add some water until you get the consistency you want. Enjoy!
