Ingredientes

  • 1 tsp Unsalted butter
  • 1 tsp Extra virgin olive oil
  • 2 Tbsp. Chopped onions
  • 1 x Clove garlic, chopped
  • 1/4 c. Arborio rice
  • 1 c. Chicken broth
  • 1/4 c. Dry white wine Salt and pepper, to taste
  • 3 x the following optional ingredients:
  • 4 ounce Cooked, sliced artichoke hearts (fresh or possibly canned)
  • 4 ounce Cooked and liquid removed diced
  • 4 ounce Cooked and liquid removed sliced
  • 2 ounce Chopped sun dry tomatoes (reconstituted in water or possibly
  • 2 ounce Chopped oil cured olives (greek/calamata may
  • 2 ounce Chopped anchovies (may be soaked in lowfat milk 15 min
  • 2 ounce Chopped capers -and- Saffron, basil or possibly other spice to taste.

Direcciones

  1. Heat butter and oil in a large soup bowl, uncovered, in the microwave oven at 100% for 2 min. (More powerful microwaves may require a lower setting.)
  2. Add in onion, garlic,and rice; stir to coat. Cook, uncovered, at 100% for 4 min.
  3. Add in broth, wine, and any optional ingredients. Cook, uncovered, for 6 min. Stir well and cook for 6 min more. Monitor to be certain which liquid does not entirely cook off.
  4. Remove from the microwave. Stir in salt and pepper and serve warm.
  5. Optional ingredients may include 4 ounces of the following: cooked, sliced artichoke hearts (fresh or possibly canned), cooked and liquid removed diced bell pepper, or possibly cooked and liquid removed sliced mushrooms; and 2 ounces: chopped sun dry tomatoes (reconstituted in water or possibly oil), chopped oil cured olives (greek/calamata may substitute), chopped anchovies (may be soaked in lowfat milk 15 min to mellow flavor), or possibly chopped capers; and Saffron, basil or possibly other spice to taste.
