  1. Crumble fresh yeast into warm water mixed with milk and sugar. Leave in a warm place to bubble.
  2. Sift flours into a larger bowl, add salt and stir.
  3. Rub the butter into the flour, add egg.
  4. Add the bubbled yeast to flour, mix and combine, then knead the dough until it becomes smooth and elastic.
  5. Cover the bowl with a kitchen towel and leave in a warm place to rise for 20-30 minutes or cover the (plastic) bowl with a transparent foil, poke a few holes in it and put in a microwave on MAX for 10 seconds. Then leave in a warm place to rise for 20-30 minutes.
  6. When dough is doubled, knead it briefly on a lightly floured surface.
  7. Divide the dough into tennis ball pieces, arrange in the baking pan lined with parchment paper, cover and leave to rise some more.
  8. Bake the rolls in a preheated oven at 200°C for about 15 minutes or until golden brown.
