.%20An%20idea%20quickly%20formed%20in%20my%20head.%3C/p%3E%3Cp%3EEarlier%20this%20week%20I%20posted%20about%20my%20first%20attempt%20at%20%C3%A9clairs.%20So...what%20about%20filling%20them%20with%20pumpkin?%20Ha!%20One%20ingredient%20down.%20Oh,%20and%20how%20about%20a%20Caramel%20Stout%20Sauce?%20Double%20ha!%20The%20last%20two%20ingredients%20taken%20care%20of.%3C/p%3E%3Cp%3ESince%20I%20just%20detailed%20making%20p%C3%A2te%20%C3%A0%20choux,%20I%20won't%20go%20through%20it%20again%20here.%20Pictures%20of%20the%20steps%20involved%20can%20be%20found%20in%20this%20previous%20post.%20I%20decided%20to%20do%20a%20couple%20of%20things%20differently%20though.%3C/p%3E%3Cp%3E*%20I%20used%20a%20faker%20pastry%20bag%20made%20from%20a%20Ziploc%20instead%20of%20spooning%20the%20pastry%20dough%20onto%20my%20cookie%20sheet%20like%20last%20time.%20The%20result:%20eh,%20I%20could%20go%20either%20way%20on%20this.%20Each%20method%20had%20its%20ups%20and%20downs.%20I%20guess%20I'd%20probably%20just%20use%20a%20spoon%20and%20not%20bother%20having%20to%20fill%20a%20fake%20(or%20real)%20pastry%20bag.%3C/p%3E%3Cp%3E*%20I%20also%20poked%20a%20hole%20in%20each%20pastry%20after%20they%20came%20out%20of%20the%20oven.%20I%20recently%20read%20that%20this%20releases%20steam,%20makes%20for%20a%20hollow%20interior,%20and%20keeps%20the%20inside%20from%20getting%20too%20soggy.%20The%20truth%20is,%20I%20found%20no%20difference%20between%20stabbing%20holes%20in%20the%20pastries%20and%20letting%20them%20be.%20I'm%20a%20lover%20not%20a%20fighter,%20so%20I'll%20skip%20the%20hole%20punching%20from%20now%20on.%20%20Ok,%20I%20lie.%20%20I%20am%20more%20of%20a%20fighter...but%20a%20lazy%20one.%3C/p%3E%3Cp%3E*%20I%20also%20decided%20to%20do%20a%20puff%20rather%20than%20an%20%C3%A9clair%20(circles%20v.%20ovals...it's%20just%20geometry,%20people).%20Oh,%20fine.%20You%20wanna%20know%20the%20truth?%20I%20liked%20the%20name%20%22Pumpkin%20Puffs%22%20more%20than%20%22Pumpkin%20%C3%89clairs.%22%20Ok?%3C/p%3E%3Cp%3EI%20thought%20the%20pumpkin%20might%20be%20too%20heavy,%20so%20I%20lightened%20up%20the%20texture%20by%20folding%20in%20whipped%20cream.%20I%20said%20lightened%20the%20texture,%20not%20the%20calorie%20count.%3C/p%3E%3Cp%3EFinally,%20the%20Caramel%20Stout%20Sauce...I%20couldn't%20get%20my%20hands%20on%20stout%20(I%20live%20in%20a%20small%20town),%20so%20I%20had%20to%20settle%20for%20dark%20beer.%20But%20Caramel%20Dark%20Beer%20Sauce%20just%20doesn't%20have%20the%20same%20punch%20to%20it,%20ya'%20know?%20This%20is%20the%20part%20of%20the%20recipe%20I%20was%20most%20concerned%20about,%20but%20it%20tastes%20really%20good!%20In%20fact,%20the%20sauce%20may%20be%20my%20favorite%20part.%20And%20it%20reminded%20me%20of%20making%20pralines,%20which%20is%20always%20fun.%3C/p%3E%3Cp%3EUPDATE:%20the%20Caramel%20Stout%20Sauce%20is%20also%20terrific%20on%20pancakes!%3C/p%3E%3Cp%3EAnd%20finally,%20finally%20after%20it%20was%20all%20put%20together,%20I%20thought...well,%20it%20just%20isn't%20dessert%20until%20someone%20breaks%20out%20the%20chocolate.%20Plus%20I%20really%20wanted%20something%20black/dark%20in%20the%20dish.%20Now%20you've%20twisted%20my%20arm.%20%20Chocolate%20drizzle%20it%20is.%3C/p%3E%3Cp%3ESo%20here's%20my%20entry%20for%20the%20latest%20Royal%20Foodie%20Joust:%3C/p%3E%3Cp%3EPumpkin%20Puffs%20w/%20Caramel%20Stout%20Sauce%3C/p%3E%3Cp%3EPumpkin%20Puffs%20w/%20Caramel%20Stout%20Sauce%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace%3C/p%3E%3Cp%3Efor%20the%20p%C3%A2te%20%C3%A0%20choux:%3C/p%3E%3Cp%3E1%20cup%20water%3C/p%3E%3Cp%3E1%20stick%20unsalted%20butter%3C/p%3E%3Cp%3E1%20cup%20flour%3C/p%3E%3Cp%3E1/4%20tsp%20salt%3C/p%3E%3Cp%3E4%20large%20eggs%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450.%3C/p%3E%3Cp%3EBoil%20the%20water%20in%20a%20heavy%20pot.%20Add%20the%20butter%20and%20stir%20until%20it%20has%20melted.%20Add%20the%20flour%20(all%20at%20once)%20and%20salt.%20Cook%20and%20stir%20until%20the%20mixture%20forms%20a%20soft%20ball%20of%20dough.%20Remove%20from%20the%20heat%20and%20cool%20for%20about%2010%20minutes.%20Make%20the%20filling%20while%20you%20wait.%20After%2010%20minutes,%20add%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20The%20dough%20should%20tighten%20up%20after%20adding%20the%20third%20egg.%3C/p%3E%3Cp%3EForm%20dough%20into%20about%20a%20dozen%20round%20shapes%20on%20a%20greased%20cookie%20sheet.%20Bake%20at%20450%20for%2015%20minutes.%20Lower%20oven%20to%20325%20and%20bake%20for%2020-25%20minutes,%20until%20golden.%20Remove%20from%20oven%20and%20allow%20to%20cool.%20Make%20the%20Caramel%20Stout%20Sauce%20while%20they%20cool.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20warm%20the%20cream%20and%20stout%20together.%3C/p%3E%3Cp%3EMeanwhile,%20heat%20the%20sugar%20on%20medium%20high%20in%20a%20heavy%20bottom%20saucepan.%20Stir%20constantly%20to%20prevent%20burning.%20As%20the%20sugar%20dissolves,%20it%20may%20be%20necessary%20to%20lower%20the%20heat.%20When%20the%20sugar%20has%20dissolved%20completely%20and%20is%20a%20light%20brown%20color,%20slowly%20add%20the%20heated%20cream%20and%20stout%20mixture.%20Stir%20as%20you%20pour.%20Continue%20cooking%20and%20stirring%20for%20about%2010%20minutes.%20Allow%20the%20sauce%20to%20cool;%20it%20will%20thicken%20once%20it%20has%20cooled.%3C/p%3E%3Cp%3ESlice%20the%20top%20third%20of%20each%20puff.%20Fill%20with%20about%203%20tablespoons%20of%20pumpkin%20filling.%20Replace%20the%20tops.%20Place%20a%20puff%20on%20a%20plate,%20drizzle%20with%20the%20cooled%20Caramel%20Stout%20Sauce,%20and%20serve.%20Store%20any%20remaining%20Pumpkin%20Puffs%20loosely%20covered%20in%20the%20refrigerator.%20For%20best%20results,%20store%20the%20sauce,%20filling%20and%20pastries%20separately%20and%20combine%20when%20ready%20to%20eat.%3C/p%3E%3Cp%3EOptional%20(but%20encouraged):%20melt%20semi-sweet%20chocolate%20chips%20and%20thin%20with%20shortening.%20Drizzle%20over%20the%20top%20of%20the%20Pumpkin%20Puffs%20along%20with%20the%20caramel%20sauce.%3C/p%3E){kind=link}
