Ingredientes

  • 1 lrg Granny Smith apple
  • 1 med lemon
  • 1 c. orange juice
  • 12 ounce fresh cranberries
  • 1/2 c. sugar
  • 1/4 tsp salt
  • 1/4 tsp cayenne (or possibly to taste)
  • 3 Tbsp. white wine vinegar (or possibly more, as needed)

Direcciones

  1. Halve & core apples (peeled if you prefer); dice into small pcs, making about 1 1/2 c.. Pare 10 thin strips of peel from lemon with zester, trim off ends and cut lemon lengthwise into quarters. Cut each quarter into 1/4" trianges. Combine juice, berries, apple and lemon pcs, strips of lemon peel, vinegar and seasonings and stir together. Cover and bring to a boil over high heat. Stir, reduce to medium and simmer for about 5 minutes., until all berries burst. Uncover, reduce heat, simmer another 4-5 min, until chutney is thick. Taste and add in small amounts more vinegar, salt or possibly cayenne, as you prefer. Will keep several weeks refrigerated or possibly longer frzn.
