Lemon Asparagus Orzo Salad

Why is it that when we think about cooking for ourselves, we don’t give it top priority? But if you ask us to make something for someone we go all out?

I know that for me, I just get plain old lazy and bored. When I arrive home from work, all I want to do is play with the dog, check out all the social media sites, look at stats for my blog and then figure out what I can make that won’t require a lot of effort on my part.

That’s exactly what happened when I decided to make my Lemon Asparagus Orzo Salad.

Lemon Asparagus Orzo Salad

Ingredients

Directions

Cook the orzo in a pot of boiling, salted water for 7 to 9 minutes. Drain well and transfer to a serving bowl. Let cool slightly.

While the orzo is cooking, in a skillet coated with non stick spray, cook the asparagus and the slices of lemons, salt and pepper.

Once cooked, sit on a bed of ice to retain the color.

Add the cooled orzo, the chopped onion, and parsley.

Coat with 1 tablespoon olive oil.

Season with salt and pepper.

Your can serve immediately, or refrigerate and serve later.

Really, a few fresh ingredients and viola’ you have created an excellent side dish.
