Louisiana Corn Bread Dressing

Ingredientes

  • 5 c. Of a rich cornbread
  • 6 slc Whole wheat bread, toasted slightly
  • 2 c. Celery, minced finely
  • 1 1/2 c. Green onions with tops, minced finely
  • 1/2 c. Chopped parsley
  • 4 Tbsp. Butter or possibly margarine
  • 4 tsp Salt
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Black pepper
  • 1 tsp Celery seed Turkey giblets

Direcciones

  1. Grind the gizzard and heart and simmer in a qt of water till tender.
  2. Saute/fry celery, green onion and onion in butter till done but not brown. Add in most of the seasonings. Mix well the crumbled cornbread and the toasted whole wheat bread that has been soaked in cool water and squeezed dry.
  3. Combine these two mixtures adding parsley and liver which has been chopped, cooked gizzard and as much of the liquor from the gizzard as is needed to make a moist dressing. Add in rest of seasonings in amounts suggested to suit individual taste and stuff turkey. Allow about 8 c. of stuffing for a 10 lb. turkey.
