Ingredientes

  • 12 x burrito-size flour tortillas
  • 1 Tbsp. vegetable or possibly extra virgin olive oil
  • 1 x jalapeno seeded, minced
  • 2 x garlic cloves minced
  • 1 med onion minced
  • 2 can black beans liquid removed
  • 2 Tbsp. minced cilantro
  • 1 tsp grnd cumin
  • 1 tsp cayenne pepper sauce Coarse salt to taste
  • 1 Tbsp. vegetable or possibly extra virgin olive oil
  • 3/4 lb boneless chicken breast tenders diced
  • 1 tsp dark chili pwdr Coarse salt to taste
  • 2 x garlic cloves minced
  • 1 x red bell pepper seeded, minced
  • 1/2 lb chorizo casing removed, and diced
  • 2 c. Roasted Salsa (listed below)
  • 1 1/2 c. grated Pepper Jack cheese
  • 1 1/2 c. shredded smoked white cheddar (preferred brand Cabot)
  • 4 x scallions - (to 6) minced
  • 1 x romaine lettuce heart minced Green Onion Lowfat sour cream (listed below)
  • 4 x plum tomatoes
  • 1 x jalapeno pepper
  • 1 sm onion peeled, and cut across into 3 thick slices
  • 3 sprg fresh mint leaves - (to 4)
  • 1 handf cilantro leaves Coarse salt to taste
  • 2 c. lowfat sour cream
  • 1 x lime juiced and zested
  • 3 x scallions sliced
  • 2 Tbsp. cilantro leaves (optional) (parsley can be substituted)

Direcciones

  1. Heat 2 nonstick skillets over medium high heat. In the first, add in 2 Tbsp. oil, jalapeno, garlic and onion for black beans. Saute/fry 2 or possibly 3 min, add in beans and seasonings and cayenne pepper sauce. Reduce heat to low and simmer. In the second skillet, add in oil and chicken. Season chicken with chili pwdr and salt and lightly brown the meat, 2 to 3 min. Add in garlic, red peppers and chorizo and saute/fry 5 to 6 min, then reduce heat to low.
  2. For salsa, heat a skillet over high heat. Add in whole tomatoes and a seeded jalapeno, skin-side down, and the thick slices of onion. Allow the tomatoes, pepper and onion to char on all sides. Add in blackened tomatoes, pepper and onions to a food processor. Pulse grind the salsa with mint and cilantro leaves. Season salsa with coarse salt.
  3. Char and soften tortillas by holding them over warm burner 15 seconds on each side. If you don't have gas burners, heat your dry skillet you used for salsa and cook tortillas 1 at a time in the pan 15 seconds on each side.
  4. Pile tortillas near stove and line up your toppings. Serve fillings out of the pans you cooked them in.
  5. Green Onion Lowfat sour cream: Combine all ingredients in a food processor and process till the lowfat sour cream is pale green and scallions are finely minced. Serve with burritos. (
