Ingredientes

  • 4 Tbsp. Extra-virgin extra virgin olive oil
  • 4 x Scallions thinly sliced
  • 4 x Garlic cloves thinly sliced
  • 2 lb Tomatoes minced 1/2" dice
  • 1 Tbsp. Fennel seeds
  • 1 Tbsp. Warm chili flakes
  • 1 tsp Salt
  • 1 x recipe Mallorredus pasta see * Note
  • 1/2 c. Freshly-grated crontese cheese

Direcciones

  1. Bring 6 qts water to boil and add in 2 Tbsp. salt.
  2. In a 12- to 14-inch saute/fry pan, heat oil till smoking. Add in scallions and garlic and saute/fry 1 minute, till light golden brown-brown. Add in tomatoes, fennel seeds, chili flakes, salt and toss till tomatoes begin to break down, about 7 to 8 min.
  3. Meanwhile, cook pasta till tender but hard, about 6 to 8 min. Drain and toss in pan with tomatoes. Toss till well coated and sprinkle heavily with cheese. Serve immediately.
  4. This recipe yields 4 servings.
