Marlin With Salmoriglio Sauce

Ingredientes

  • 1/2 c. Extra-virgin extra virgin olive oil
  • 1/4 c. Fresh lemon juice
  • 2 Tbsp. Warm water
  • 6 Tbsp. Minced fresh parsley
  • 2 lrg Garlic cloves, finely minced
  • 1 Tbsp. Dry oregano
  • 6 x Marlin fillets, each about 1 inch thick (6-oz)

Direcciones

  1. Prepare barbecue (medium-high heat) or possibly preheat broiler. Whisk extra virgin olive oil in top of double boiler over simmering water till heated through. Gradually whisk in fresh lemon juice, then 2 Tbsp. warm water. Add in minced fresh parsley, minced garlic and oregano and cook sauce 5 min to blend flavors, whisking frequently. Season sauce to taste with salt and pepper.
  2. Remove sauce from over simmering water.
  3. Lightly brush Marlin on both sides with sauce. Season fish with salt and pepper. Grill or possibly broil till just cooked through, about 5 min per side.
  4. Transfer fish to platter. Spoon remaining sauce over and serve.
  5. Serves 6.
