Ingredientes

  • 4 lrg Large eggs, hard-boiled -- minced
  • 1/4 c. shredded sharp cheddar cheese
  • 1 Tbsp. minced green onions
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. salsa
  • 1 Tbsp. lowfat sour cream
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 6 x taco shells Lettuce leaves

Direcciones

  1. Combine first three ingredients in a bowl; set aside.
  2. Combine mayonnaise and next 4 ingredients; fold into egg mix.
  3. Line taco shells with lettuce. Spoon egg salad proportionately into taco shells.
  4. Garnish, if you like, with shredded cheese and/or possibly avocado slices, and serve with salsa.
  5. 6 servings.
