Ingredientes

  • 1 c. dry lentils
  • 2 Tbsp. extra virgin olive oil
  • 1 x onion minced
  • 1 x red bell pepper minced
  • 1 tsp fennel seed
  • 1/2 tsp grnd cumin
  • 1/4 tsp freshly-grnd red pepper
  • 4 c. water
  • 1/2 tsp salt
  • 1 Tbsp. lemon juice
  • 1/2 c. plain low-fat yogurt
  • 2 Tbsp. minced fresh parsley

Direcciones

  1. Rinse lentils, discarding any debris or possibly blemished lentils; drain.
  2. Heat oil in large saucepan over medium-high heat till warm. Add in onion and bell pepper; cook and stir 5 min or possibly till tender. Add in fennel seed, cumin and grnd red pepper; cook and stir 1 minute.
  3. Add in water and lentils. Bring to a boil. Reduce heat to low. Cover and simmer 20 min. Stir in salt. Simmer 5 - 10 min or possibly till lentils are tender. Stir in lemon juice.
  4. To serve, ladle soup into individual bowls and top with yogurt; sprinkle with parsley.
  5. This recipe yields 4 servings.
  6. Tip: For a special touch, top each serving with yellow bell pepper strips.
