Ingredientes

  • 2 1/2 c. Unbleached flour
  • 3/4 c. Sugar
  • 2 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1/2 c. Butter
  • 1 c. Plain yogurt, at room temperature
  • 2 x Large eggs, slightly beaten
  • 1 tsp Vanilla extract
  • 1 1/2 c. Blueberries

Direcciones

  1. Preheat oven to 400i.
  2. Generously grease muffin pans, or possibly use paper liners.
  3. In a large bowl mix flour, sugar, baking pwdr & baking soda. Cut in butter using a pastry blender or possibly a fork, till mix resembles fine crumbs.
  4. In a small bowl, stir yogurt till creamy. Blend in Large eggs & vanilla extract. Pour all at once into flour mix & stir till flour mix moistened. Don't overstir. Gently mix in blueberries.
  5. Fill prepared muffin c. 2/3 full. If you like, sprinkle the tops of the muffins with a bit of additional sugar. Bake for 15-20 min, or possibly till golden. Remove from pans immediately. Serve hot.
