Ingredientes

  • 1/4 c. Corn or possibly extra virgin olive oil
  • 1 c. Coarse yellow cornmeal
  • 4 c. Chicken broth - (to 5 c.)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Heat oil in a large saucepan over medium heat. Add in cornmeal and saute/fry, stirring constantly, for about a minute so which the grains are coated with oil. Add in the broth and bring the liquid to a boil over medium heat, whisking all the while. When cornmeal comes to a simmer, it will bubble up vigorously. Quickly put a lid on saucepan, turn heat down to very low and cook the cornmeal till it no longer tastes raw, about 20 min.
  2. This recipe yields 4 servings.
