New England Boiled Dinner (Clay Pot)

Ingredientes

  • 3 lb Corned beef
  • 4 c. Water
  • 1 x Bay leaf
  • 1 tsp Thyme
  • 3 sprg parsley
  • 1 tsp Peppercorns
  • 2 x Anions, finely chapped
  • 2 x Carrots, sliced
  • 2 stalk celery, sliced
  • 1 sm Cabbage, cut into wedges
  • 6 sm Potatoes, cut into halves
  • 6 x Carrots, cut into 1 1/2 inch pcs
  • 3 x Parsnips, cut into 1 1/2 inch pcs
  • 1 sm Turnip, cut into cubes
  •     A whole meal in one pot.

Direcciones

  1. Soak the pot in cool water for 10 min. Place the beef in the pot. Add in the water. There should be sufficient water to just cover the beef. Add in the herbs, onions, carrots and celery. Cover the pot and place in a cool oven. Turn the heat to 450F and bake for 1 hour.
  2. Add in the accompaniment vegetables, cover the pot and continue cooking for another hour. Serve with horseradish, or possibly make a horseradish dressing by combining 1 c. lowfat sour cream, 3 Tbsp. prepared horseradish and the juice of 1/2 lemon.
