No Sugar Fruit/Nut Muffins

Ingredientes

  • 1 c. Minced dates
  • 1/2 c. Raisins
  • 1/2 c. Dry prunes, minced
  • 1 c. Water
  • 1/2 c. Margarine
  • 1/4 tsp Salt
  • 2 x Large eggs, beaten
  • 1 tsp Vanilla extract
  • 1 c. All-purpose flour
  • 1 tsp Baking soda
  • 1/2 c. Mixed nuts, minced

Direcciones

  1. In a saucepan combine dates, raisins, prunes and water. Bring to boil and boil 5 min. Stir in margarine and salt. Set aside to cold.
  2. Add in remaining ingredients to fruit; stir just till dry ingredients are moistened. Spoon into greased MINI-muffin pans. Bake in preheated 350-degree oven for 15 min. (If you like can bake in a greased 11 x 7 x 2-inch pan for 30 min.)
  3. Yield: 32 mini-muffins.
