North African Vegetable Soup

Ingredientes

  • 6 c. reduced sodium, defatted chicken broth
  • 3 x cloves garlic, chopped
  • 1 c. minced leeks or possibly onion
  • 1 x rib celery, minced
  • 1 sm sweet potato, peeled and cubed
  • 1 sm zucchini, diced
  • 1 lrg carrot, diced
  • 1 x (16 ounce) can chickpeas, liquid removed and rinsed
  • 1 x cinnamon stick
  • 1/2 tsp grnd cumin
  • 1/8 tsp grnd cloves
  • 1/2 tsp chili pwdr
  • 1/2 tsp kosher salt, or possibly more to taste
  • 2 Tbsp. lemon juice
  • 1/4 c. minced fresh mint or possibly 1 1/2 tbs dry
  • 1/4 c. minced fresh parsley

Direcciones

  1. Bring broth to a simmer. Add in all the other ingredients except the salt, lemon juice, mint, and parsley. Cover and simmer for 30 min. Add in the remaining ingredients and simmer for 10 min longer. Remove the cinnamon stick.
  2. Yield:about 5 servings.
