Ingredientes

  • 4 slc applewood-smoked bacon
  • 2 x sliced onions (abt 4 c.)
  • 1 tsp sugar
  • 2 Tbsp. balsamic vinegar
  • 1 tsp ketchup
  • 2 tsp Worcestershire sauce
  • 2 dsh liquid smoke - (to 3)
  • 1/4 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 1/2 lb strip steak (preferably dry-aged) grnd
  • 1/2 lb beef rib-eye steak (preferably dry-aged) grnd
  • 1 1/2 tsp salt
  • 2 Tbsp. butter
  • 1 ounce Maytag blue cheese
  • 4 ounce Gruyere cheese
  • 4 x French demi-baguettes halved, toasted
  • 1 c. baby arugula

Direcciones

  1. For the Caramelized Onions: Heat a skillet over medium-high heat. Fry the bacon till crisp, 5 to 6 min, then remove to paper towels to drain. (Note: You'll need to cook more bacon than you actually will use to have sufficient drippings.) Crumble 1 of the slices and set aside; reserve the rest of the bacon for another use.
  2. Measure 2 Tbsp. of the bacon fat into a medium heavy skillet. Add in the onions to the skillet and sprinkle with the sugar. Cook till the onions are golden, about 20 min. Halfway through, stir in the crumbled bacon. At the end of the 20 min, stir in the balsamic vinegar, ketchup, Worcestershire sauce, liquid smoke, salt and pepper. Cook for 2 more min. Set aside.
  3. For the Burgers: Combine the strip and rib-eye steaks and fold in the salt. Shape the meat into 4 (7-inch) oval patties, about 3/4-inch thick. Heat 1 Tbsp. of butter in a large skillet, preferably cast-iron, over medium-high heat. Fry the burgers, 2 at a time, for 3 min, then flip. Top each burger with 1/4 of the blue and Gruyere cheeses. Cook the burgers 3 more min for medium. Remove and keep hot; heat the remaining butter in the skillet and repeat with the remaining 2 patties and cheeses.
  4. To assemble, place the burgers on the baguettes and top with the onions and arugula, dividing proportionately.
  5. This recipe yields 4 servings.
