%20%20And%20I%20always%20made%20pancakes%20with%20buttermilk%20and%20butter%20-%20but%20I%20wanted%20to%20see%20if%20I%20could%20make%20them%20dairy%20free%20-%20and%20still%20have%20them%20taste%20good.%20%20I%20started%20out%20using%20vanilla%20flavored%20soy%20milk%20and%20the%20dreaded%20earth's%20best%20margarine%20(again,%20previous%20post%20for%20what%20I%20think%20about%20THAT%20stuff)%20-%20and%20the%20pancakes%20were%20passable%20-%20but%20didn't%20get%20that%20nice%20crust%20we%20liked%20that%20came%20about%20when%20you%20buttered%20the%20pan.%20%20Plus,%20the%20soy%20milk,%20no%20matter%20how%20much%20you%20try%20to%20hide%20it%20with%20vanilla%20flavoring,%20to%20me%20just%20tastes%20off.%20%20There%20is%20an%20aftertaste.%20%20I%20know%20lots%20of%20people%20like%20it,%20and%20I'm%20certainly%20not%20hating%20on%20the%20whole%20soy%20industry%20-%20it's%20just%20-%20for%20us,%20well,%20ew.%20%20Plus%20in%20all%20my%20breast%20cancer%20research,%20there%20is%20a%20link%20between%20soy%20and%20hormones%20and%20breast%20cancer,%20so%20the%20girls%20and%20I%20are%20probably%20better%20off%20not%20drinking%20it.%20%20So%20we%20switched%20it%20out%20for%20vanilla%20flavored%20rice%20milk%20-%20and%20that%20was%20great.%20No%20weird%20after%20taste%20-%20but%20I%20was%20still%20left%20with,%20ok%20I'm%20just%20going%20to%20say%20it,%20flaccid%20pancakes.%20%20Ew.%3C/p%3E%3Cp%3EI%20don't%20know%20why%20it%20took%20me%20so%20long,%20but%20I%20finally%20switched%20the%20margarine%20out%20for%20good%20old%20canola%20oil,%20and%20LOW%20AND%20BEHOLD,%20the%20perfect%20pancakes.%20%20Add%20to%20them%20some%20dairy%20free%20chocolate%20chips%20and%20they%20were%20amazing.%20%20Plus,%20no%20stomach%20ache.%20%20And%20the%20other%20family%20members%20loved%20them.%20%20So%20happiness%20all%20around.%3C/p%3E%3Cp%3EI%20like%20to%20mix%20the%20dry%20ingredients%20for%20my%20pancakes%20and%20just%20leave%20it%20sitting%20in%20a%20jar%20so%20that%20it%20takes%20me%20a%20fraction%20of%20the%20time%20to%20make%20breakfast%20in%20the%20morning.%3C/p%3E%3Cp%3ETo%20do%20this%20scoop%204%20cups%20of%20all%20purpose%20flour,%203%20TBLSP%20of%20baking%20powder,%202%20tsp%20of%20baking%20soda,%20%20a%20scant%20TLBS%20of%20sea%20or%20kosher%20salt%20and%202%20TLBS%20of%20sugar%20into%20a%20large%20jar%20and%20put%20the%20lid%20on%20and%20shake%20it%20up.%20%20If%20you%20want%20to%20get%20fancy,%20you%20can%20divide%20this%20mixture%20into%20two%20smaller%20jars%20and%20drop%20a%20vanilla%20bean%20into%20one%20and%20an%20orange%20peel%20in%20the%20other%20-%20which%20will%20gently%20flavor%20your%20pancakes.%20%20Or%20get%20crazy%20and%20drop%20in%20a%20cinnamon%20stick.%3C/p%3E%3Cp%3EThen,%20when%20you%20are%20ready%20to%20make%20your%20pancakes,%20break%201%20large%20egg%20into%20a%20large%20bowl.%20%20Add%201%20cup%20of%20vanilla%20flavored%20rice%20milk%20and%201TLBS%20of%20canola%20or%20other%20lightly%20flavored%20oil%20(grapeseed%20is%20good,%20but%20olive%20oil%20is%20too%20strong)%20to%20the%20bowl%20and%20give%20it%20a%20good%20whisking.%3C/p%3E%3Cp%3EThen%20dump%20in%201%20cup%20of%20the%20pancake%20mixture.%20%20If%20you%20mixture%20is%20plain,%20add%201%20tsp%20of%20vanilla%20before%20mixing%20it.%20%20If%20it%20is%20already%20flavored,%20leave%20it%20be.%20%20Play%20around%20-%20have%20fun%20-%20go%20nuts%20with%20the%20flavors.%20%20Mix%20it%20up%20until%20it%20is%20only%20marginally%20lumpy.%20%20If%20it%20looks%20too%20dry,%20add%20more%20rice%20milk.%20%20I%20don't%20like%20my%20batter%20too%20dry.%3C/p%3E%3Cp%3EWhile%20you%20are%20doing%20all%20this,%20you%20should%20be%20preheating%20your%20pan%20or%20griddle.%20%20Just%20before%20you%20make%20you%20pancakes%20-%20add%20a%20swirl%20of%20canola%20oil%20(this%20is%20usually%20a%20couple%20of%20tblsps)%20-%20Cook%20the%20pancakes%20over%20medium%20heat%20until%20the%20bubbles%20burst,%20then%20flip%20'em.%20%20I%20find%20that%20if%20I%20cook%20them%20on%20to%20high%20a%20heat%20they%20burn%20quickly,%20probably%20because%20of%20the%20oil%20-%20but%20do%20be%20sure%20your%20pan%20is%20good%20and%20hot%20before%20you%20add%20the%20oil.%20%20Then%20turn%20the%20heat%20down%20to%20medium%20when%20you%20add%20the%20batter.%3C/p%3E%3Cp%3EWe%20are%20big%20fans%20of%20adding%20chocolate%20chips.%20%20Emm%20has%20become%20addicted%20to%20these%20Enjoy%20Life%20Mega%20Chunk%20chocolate%20chips%20which%20are%20dairy,%20wheat%20and%20nut%20free.%20%20A%20handful%20of%20these%20sprinkled%20on%20top%20of%20the%20pancake%20while%20it%20cooks,%20before%20you%20flip%20it%20-%20takes%20it%20from%20darn%20good%20to%20spectacular.%3C/p%3E%3Cp%3EHeavenly%20-%20dairy%20(and%20stomach%20ache)%20FREE%3C/p%3E){kind=link}
