Peanut Butter Marshmallow Pinwheels

Ingredientes

  • 3 c. sugar
  • 1/2 c. light Karo syrup
  • 1/2 c. warm water
  • 2 egg whites, beaten till stiff
  • 1/4 teaspoon vanilla
  • peanut butter - 1 jar (maybe less - it depends on how much you like peanut butter)
  • I love this recipe. I used to buy candy like this in Kentucky gift shops. It is great, but hard to get right.

Direcciones

  1. Cook sugar, Karo syrup and water in medium sized boiling pan on medium-high till mix begins to create small balls. When you pull out the spoon, the mix is very stringy. Remove from heat.While mix above is cooking, begin beating 2 egg whites and 1/4 teaspoon vanilla in a large bowl with mixer till stiff peaks appear. Let set till sugar mix is ready.
  2. Begin pouring sugar mix into egg whites very slowly as you continue to beat with the mixer. Once all of the sugar mix is added, turn off the mixer and stir by hand. Continue stirring the mix till it is very hard to move by hand, do not let the mix get too hard. The mix should be a little soft (marshmallow like) and a little sticky.
  3. Pour the mix onto a table coated with butter and a small dusting of powdered sugar. Quickly pat out the mix and lightly spread it out like biscuit dough with a roller. Do not roll it too thin. Quickly spread peanut butter all over mix. Roll up log quickly, might still be a little sticky, just pat the log with powdered sugar as you roll it up.
  4. Let the log sit and cool down to room temperature, then cut into pinwheel slices.
