Penne With Tomato And Balsamic Vinegar ( Penne Con Pomodoro E Aceto Balsamico)

Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 2 clv garlic peeled and cut into slivers
  • 1 handf fresh basil
  • 1 x 800g tin peeled plum tomatoes
  •     sea salt and freshly grnd black pepper
  • 250 gm penne rigate
  • 75 gm butter cut into pcs
  • 4 Tbsp. balsamic vinegar 10 year old plus
  • 120 gm Pecorino cheese freshly grated

Direcciones

  1. Heat the oil in a large pan and gently fry the garlic slivers till light brown.
  2. Add in a few of the basil leaves and then the tomatoes.
  3. Stir and cook gently for 30-40 min till reduced to a thick sauce.
  4. Season with salt and pepper and add in the remaining basil.
  5. Cook the penne in a generous amount of boiling salted water drain thoroughly and return to the saucepan with the butter.
  6. When this has melted add in the balsamic vinegar and toss over a gentle heat for a few seconds till the penne are brown in colour.
  7. Throw in a handful of the grated Pecorino and finally stir in the tomato sauce.
  8. Serve with more Pecorino.
  9. We use a ten year old balsamic vinegar to colour and flavour the penne. If you dont you may need an extra couple of Tbsp..
