Ingredientes

  • 1 1/4 c. sugar
  • 4 large eggs
  • 2 c. coconut lowfat milk
  • 2 lemons
  • 1 T baking soda
  • 2 c. water
  • 7 c. flour

  1. Caramelize 1/2 cup of the sugar. Beat large eggs, add in all of the sugar and lemon juice, coconut lowfat milk and water. Stir in flour and soda sifted together. Wet a large square of material (a flour sack is good for this) and sprinkle flour where batter will be. Add in batter and bring up edges of the material. Tie at top leaving 3 inches from batter for expansion. Place this in a large pot 3/4 full of boiling water, and let boil about 3 hrs.Check during cooking time to make sure there is sufficient water. When adding water, it should be boiling water. Cook with lid on. When you take the pudding out of the water, remove the cloth immediately. Allow pudding to cool. Serve in thin slices with thin custard sauce.
