This is a surprisingly delicious and flavorful dish given the relative lack of spices. The combination of the different vegetables is a wonderful medley of flavors in itself. We served it as a side dish with grilled salmon and rice. It was a great combination. This dish is also beautiful and would make a great addition to a Pot Luck or BBQ party.

This dish is even better tasting than it sounds, but it is also takes more time than listed. I'd estimate about 35 minutes of prep time. To save some time, try sauteing the onions and mushrooms while the eggplant and zucchini are salting. I also sliced the tomatoes instead of wedging them. That seemed to fit better in the baking dish. This dish was a big hit with all the adults who tried it. Not as popular with the kids, though they liked the connection to the movie Ratatouille!

Wonderful flavors! My husband and I both loved it! It was a little "oily" at the bottom, due to the amount of EVOO used, BUT it also made it really tasty! Very good recipe!

I hope you like it. If you prefer spicy foods, you might want to turn on the heat. I tend to eat blander foods b/c I can't take really hot or spicy food. This one's an old favorite of mine. I think I'll hit the farmer's market and then make it this coming weekend. Enjoy!
