Receta Raw Vegetable Salad for a Crowd

Like many of my recipes, this one has been hanging around since the '70's, and it is always a huge hit. I have never tried to alter it in any way, as I've never felt it needed it; but if anyone has any suggestions, fire away!
It takes a bit of planning, as it needs to marinate overnight, but it's well worth it.
Because it makes such a large amount, I only make this salad when I am entertaining a big crowd.

  1. Cut all vegetables into bite-sized pieces and combine in a large bowl, except for the cucumbers and tomatoes. I put those in just before serving, as the cukes tend to get soft and the tomatoes just get messed up.
  2. Mix all dressing ingredients well and pour over salad. Cover and refrigerate overnight.
  3. Add cherry tomatoes and cucumbers, toss gently and serve.

    I love the vegetables in this recipe. This might be a recipe for a crowd, but I could easily enjoy making a big batch for a work week lunch too.

        This is a really good salad. I still make it often, and it really is best prepared the day before, and then adding the cucumbers and tomatoes a little while before serving.
