Salmon Burgers With Honey Barbecue Sauce

Ingredientes

  • 1/4 c. ketchup
  • 1/4 c. honey
  • 1 1/2 Tbsp. cider vinegar
  • 1 Tbsp. prepared horseradish
  • 1/2 tsp chopped garlic
  • 1 tsp crushed red pepper flakes to taste
  • 14 3/4 ounce salmon, canned liquid removed
  • 3/4 c. dry bread crumbs
  • 1/2 c. toasted wheat germ
  • 1/2 c. onion finely minced
  • 1/3 c. green bell pepper finely minced
  • 1 1/2 tsp Egg Replacer mixed with
  • 1 Tbsp. water
  • 1 Tbsp. liquid from salmon
  • 1/2 tsp lemon juice toasted
  •     salt and pepper to taste

Direcciones

  1. Heat broiler. In a small bowl, combine honey, ketchup, vinegar, horseradish, garlic and red pepper flakes till well-blended. Set aside 1/4 c. sauce. In separate bowl, mix together salmon, bread crumbs, wheat germ, onion, green pepper and egg replacer. Blend in 1/4 c. of reserved sauce. Divide mix into 4 patties ( 1/2 inch to 3/4 inch thick). Place on baking sheet coated with cooking spray and baste with remaining sauce. Broil 4 to 6 inches from heat 3 min. Turn and baste; broil 3 to 4 more min or possibly till cooked through. Throw away any remaining sauce.
  2. NOTES : These were wonderful! I do not particularly care for canned salmon, but the taste was really masked in these burgers. The sauce really made them.
  3. I didn't have a full c. of breadcrumbs, so I topped it off with toasted wheat germ. (Thank you MC, for the substitution suggestion.) I didn't have any onions, so I used dry onion flakes. The 1/4 tsp red pepper flakes wasn't even noticeable, so I used 1 tsp in the sauce, and then added at least another tsp to the reserved sauce for basting. The mix was a little too sweet for me, so I upped the horseradish and cider vinegar a bit, and added the juice of a 1/2 lemon which needed to be used.
