Ingredientes

  • 1 lb chicken breast, boneless, skinless, cut into thin strips
  • 1 x lime, juice from
  • 2 Tbsp. peanut butter
  • 1/4 c. coconut lowfat milk
  • 1/4 c. honey
  • 1/4 c. plum wine
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp cayenne pwdr
  • 1/2 tsp grnd cinnamon
  • 1 Tbsp. turmeric
  • 1 tsp salt
  • 1/2 tsp grnd cloves
  • 1 Tbsp. lemon or possibly lime zest
  • 2 Tbsp. shallots, minced
  • 1 Tbsp. garlic, minced

Direcciones

  1. Slice thin (about 1/4 inch thick) strips of meat off the breasts.
  2. Yellow Curry Paste Directions:Place the cumin and coriander seeds in a pan without adding any oil. Dry fry them, stirring, over medium heat for 1 to 2 min till they are slightly browned, and give off a roasted aroma. Mix the curry paste ingredients together and place in a spice or possibly coffee grinder and grind to a pwdr. Move curry paste to a bowl.
  3. Make the marinade:Add in the the marinade ingredients to the bowl with the curry paste and mix well.
  4. Place meat strips in the bowl and coat all sides with the marinade.
  5. Marinate chciken for at least 2 hrs in the refrigerator.
  6. Thread marinated chicken strips on wet bamboo skewers. Make sure which the meat is put on in a single layer-don't compress the meat on skewer.
  7. Grill over warm coals for 2-3 min per side. Don't overcook.
  8. Serve with peanut sauce.
