Ingredientes

  • 4 ounce linguine
  • 1/2 lb bay scallops
  • 1 x 10.5 ounce can progresso white clam sauce
  • 1 med tomato, (diced)
  • 1 sm onion diced
  • 1/2 c. sliced fresh mushrooms
  • 1/4 c. white zinfandel wine
  • 2 Tbsp. garlic, (chopped)
  • 1/4 tsp Italian seasoning
  •     extra virgin olive oil
  •     freshly grated parmesan and romano cheese

Direcciones

  1. Begin to prepare linguine according to instructions on box.
  2. MEANWHILE: Sauteeonion in extra virgin olive oil over medium heat approx 2 min. Add in mushrooms, garlic, tomato and Italian seasoning. Drain off approx 1/4 can of liquid from clam sauce - then add in and simmer for 3-5 min Finally add in wine and scallops (including liquid).
  3. Cover and simmer 3-5 minutes, stirring frequently till scallops are done. Serve over linguine. Garnish generously with parmesan and romano.
  4. Total preparation time 20 min.
