These are great on a bed of mixed greens (maybe with goat cheese & tomatoes), layered with Fontina cheese & tartar sauce on sliced sourdough, over rice or eaten between bun.

  1. Mix flour, salt and pepper. In separate bowl beat egg than add to flour mixture. Add shrimp, onion, bell pepper, parsley, breadcrumbs and cheese. Heat oil in frying pan (about 1/4" thick which in a medium frying pan ends up being about 1/4 cup or so) until very hot. To test stick the handle of a wooden spoon into the oil, if the oil around the handle bubbles its ready. Make shrimp mixture into patties and fry for about 3 minutes on each side until its a nice golden brown. Drain on paper towels. Serve with Tartar Sauce.

    I am planning to make your shrimp cakes for my wedding on August 7, 2010. I will try baking them in a muffin pan, and mix the olive oil with the ingredients beforehand. What do you think of using a baking method? I would also like to use shredded pecorino cheese instead of parmesan. Thanks!

        Mmmm. These sound yummy! I think I'm going to make these next Tuesday for a party we are throwing. Can't wait to try them!
